Here’s another wonderful recipe that focuses on the bounty of summer produce as the main ingredient…..ZUCCHINI!

Full of soluble fiber from zucchini, functional proteins from eggs, cheese & almond flour, antioxidants from Ras el hanout spice blend, & polyphenols from the olive paste & olive oil.

The Ras el hanout spice blend is a super flavorful blend made up of cumin, ginger, turmeric, black pepper, cinnamon, coriander, allspice & cloves, all with their own unique health benefits.

Note that a chaffle is typically made with cheese & eggs only, but I’ve tweaked the base to lighten it up & add some more flavorful ingredients



  • 1.5 cups of grated, squeezed zucchini
  • 2 large eggs, beaten
  • 1/3rd cup almond flour
  • 1/3rd cup grated cheddar
  • 3/4 cup grated parmesan
  • 2 tsp Ras el hanout
  • 1 tsp rosemary
  • 1 tsp garlic powder
  • 1/4 tsp cobanero chili powder
  • 1/2 tsp salt
  • 1 tsp black pepper

1). Preheat the Belgian waffle iron

2). Place all the ingredients in a bowl and mix well

3). Spray the waffle iron with non-stick spray

4). Add 1/3rd of the blend to waffle iron

5). Cook 3-5 minutes until brown & crispy

Lemon Olive Sauce:

  • 1 cup coconut yogurt
  • 1 tbsp black olive paste
  • 1/3rd cup cilantro, chopped
  • 1 tbsp extra virgin olive oil
  • Juice & zest from one lemon
  • Salt & pepper to taste

1). Blend all the ingredients together & set aside


1). Take the hot waffle & add a dollop of the lemon olive sauce

2). Garnish with orange zest & fresh local cherry tomatoes

3). Enjoy!
