Now here’s another amazing end-of-summer recipe that’s packed full of nutrient-dense ingredients full of phytonutrients, antioxidants, B vitamins, selenium, zinc, conjugated linoleic acid, quality carbs, & clean protein.
Simple to make as it’s all done in one pot & from start to finish should take less than an hour to make.
Serve with a baby arugula salad with freshly shaved parmesan with red wine vinaigrette, my hearty nut & seed bread, & you have a great satisfying meal.
Of note, it’s even better the next day once all the flavors have mingled.

Recipe:
- 1 tbsp avocado oil
- 1 lb ground lamb
- 1 yellow onion, diced
- 1 carrot, diced
- 2 stalks of celery, diced
- 4 cloves garlic, minced
- 2 yellow squash, diced
- 1 green zucchini, diced
- 1 can chickpeas, rinsed & drained
- 1 cup grape tomatoes, halved
- 1/2 cup flat-leaf parsley, chopped
- 2 tsp ground cumin
- 1 tsp whole cumin seed
- 1/2 tsp turmeric
- 1 tsp Aleppo pepper
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp black olive paste
- 1 tsp capers
- 1/2 tsp lemon confit puree
- 32 oz chicken broth
Directions:
1). Heat a Dutch oven over medium heat with 1/2 tbsp oil
2). Saute & brown the lamb & reserve
3). Heat the remaining 1/2 tbsp oil & saute onion, carrots & celery til soft
4). Add garlic & cook til soft
5). Add yellow tomatoes, squash & zucchini & cook til soft
6). Add chickpeas, herbs, spices & chicken broth
7). Bring up to a boil & simmer
8). Add the cooked lamb back to the pot
9). Add the black olive paste, capers & lemon confit puree
10). Continue to cook til all the vegetables are soft, but still al dente
11). Season to taste with additional salt, pepper, herbs & spices
12). Remove from heat & enjoy
