For all you meat lovers out there, here’s an awesome recipe that I’m sure you’ll truly enjoy.

High quality fresh locally sourced pork loin, oven roasted grape tomatoes, sauteed mixed wild mushrooms, with cauliflower “risotto” & rosemary wild mushroom pan juice.

Great source of protein, phytonutrients, fiber, B vitamins, iron & zinc from all of the ingredients that will help support your gut & brain health.

Give it a try.

Grilled Pork Loin:

  • 1 pork loin chop on bone
  • 2 tbsp avocado oil
  • 1 sprig fresh rosemary, chopped
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp extra virgin olive oil

1). Mix the paprika, rosemary, salt and pepper with the oil

2). Spread the mixture over the pork and let sit for at least an hour or overnight in fridge

3). Preheat grill

4). Grill on both sides until internal temp 145 dF

5). Pull off grill and let rest 10 minutes

6). Collect meat juice for sauce

Mixed Wild Mushroom Cauliflower “Risotto”:

  • 1 bag riced cauliflower
  • 1 container shiitake mushrooms, quartered
  • 1 container oyster mushrooms, quartered
  • 1 container cremini mushrooms, quartered
  • 1 red onion, sliced
  • 3 cloves garlic, chopped
  • 16 grape tomatoes, whole
  • 2 bunches scallions, whole
  • 1 sprig fresh rosemary, chopped
  • 6 sprigs fresh thyme, chopped
  • 2 cups mushroom broth
  • 1 tbsp Avocado oil
  • Salt and pepper to taste

1). Place grape tomatoes, avocado oil, thyme, salt and pepper on baking tray

2). Roast at 425 dF for 15 minutes til blistered and soft and reserve

3). Saute wild mushrooms until soft

4). Add onion, garlic, rosemary & thyme & saute until soft

5). Add riced cauliflower & saute until almost soft

6). Add mushroom broth & cook down mixture til cauliflower is soft

5). Toss scallions with avocado oil & grill until nicely charred & chop

6). Add oven roasted tomatoes to mixture


  • Pork Loin w/ residual juices
  • Fresh rosemary
  • “Risotto”
  • Parmesan cheese shreds
  • Broccoli sprouts

1). Spoon “risotto” onto plate

2). Top with whole or sliced pork loin chop

3). Take collected pork juices, mushroom broth, rosemary & swirl in the olive oil

4). Drizzle over pork

5). Garnish with parmesan cheese & broccoli sprouts
