Here is a great summer Morrocan inspired recipe that provides you with omega 3 fatty acids, polyphenols, antioxidants, fiber and protein that will keep you coming back for more.  Give it a try.

Eggplant & Spice Oil:

  • 4 small eggplants
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground roasted coriander
  • 2 teaspoons cobanero chili
  • 1 teaspoon paprika
  • 1/3rd cup extra virgin olive oil
  • Sea salt to taste

1). Cut eggplants in half

2). Cross hatch eggplants

3). Mix all remaining ingredients together & glaze eggplant

4). Roast eggplants skin side up in a 425 dF oven for ~40 minutes til tender & golden brown

Warm Quinoa Salad:

  • 1.5 cups chicken broth
  • 1 cup uncooked quinoa
  • 1/3rd cup pitted olives, halved
  • 1/4 cup slivered almonds, toasted
  • ½ cup chopped mint leaves
  • 1/2 cup pomegranate seeds (not in video)
  • 1 TBSP black sesame seeds
  • 2 TBSP extra virgin olive oil
  • Salt & pepper to taste

1). Add 1.5 cups of chicken broth to pot and bring to boil

2). Add quinoa & cook 15 minutes over low simmer

3). Add remaining ingredients & set aside

Lemony Black Sesame Tahini Sauce:

  • ¼ cup fresh lemon juice
  • ¼ cup tahini
  • 2 TBSP water
  • 2 TBSP black sesame seeds
  • Salt & pepper to taste

1). Whisk lemon juice & tahini together, will become thick

2). Add water to thin out (may need more or less)

3). Add remaining ingredients

Grilled Trout:

  • 1 whole trout, filleted
  • 1 tsp roasted coriander seeds
  • 1 tsp dried orange peel
  • Salt and pepper to taste
  • 1 TBSP extra virgin olive oil

1). Season trout & grill skin side down til crispy

2). Flip over briefly to finish cooking


1). Place roasted eggplant & trout on plate

2). Top with quinoa salad

3). Drizzle sauce onto dish

4). Garnish with mint springs
