Here’s a wonderful & delicious farmer’s market salad focused on a bounty of different colors & types of beets along with other great anti-inflammatory supporting ingredients like rosemary, mint and clementines.

Beets are a wonderful source of vitamin A, folate, betaine, prebiotic fiber and naturally occurring nitrates, all of which support reducing inflammation and promoting a healthy gut.

Oven Roasted Beets:

  • 1 red beet, quarted
  • 1 yellow beet, quartered
  • 1 white beet, quartered
  • 1 badger flame beet, quartered
  • 1 tbsp avocado oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1 tsp black pepper

1). Wash the beets and keep the skin on

2). Place cut beets onto a baking tray

3). Toss with oil, rosemary, salt and pepper

4). Roast in a 425 dF oven for about 30 minutes til tender

5). Let cool to room temp

6). Cut into bite sized pieces


Grain Mustard & Mint Vinaigrette:

  • 1 tsp whole grain mustard
  • 1 tsp Dijon mustard
  • Zest from 3 clementines
  • Leftover juice from clementines after segmenting
  • 8 sprigs fresh mint, sliced
  • 1 tsp red wine vinegar
  • 3 tsp extra virgin olive oil
  • Salt & pepper to taste

1). Add all the ingredients except the oil to a bowl and mix well

2). Slowly whisk in the oil til it gets thick


Crispy Prosciutto:

  • 3 slices of high quality Prosciutto (just pork & salt)
  • 1 tsp avocado oil

1). Heat up a skillet over medium heat and add oil

2). Add Prosciutto and render out the fat

3). Flip onto other side and continue to cook til crispy

4). Let cool and chop up


Salad Assembly:

  • 3 clementines, segmented
  • 2 tbsp pine nuts, pan toasted
  • 8 mixed color grape tomatoes
  • 1 cup baby arugula, chopped
  • Roasted beets
  • Grain mustard and mint vinaigrette
  • Salt & pepper to taste
  • Mint sprigs

1). Add all the ingredients to a bowl

2). Toss and mix well

3). Add salt and pepper, if needed

4). Let sit at least an hour at room temp or chilled

5). Serve over additional baby arugula and garnish with mint sprigs
