Here’s a great recipe that is not only super flavorful and delicious, but it packs a punch when it comes to nutrition too.

RECIPE:

For the “frittata”

2 organic pasture raised eggs, beaten

1 zucchini, grated & squeezed dry

1 TBSP almond meal

1 TBSP millet flour

2 sprigs fresh rosemary, chopped

6 sprigs fresh thyme, chopped

1/4 tsp black garlic powder

1/8 tsp crushed red pepper

1/4 tsp Redmond salt

6 turns fresh black pepper

1 tsp baking soda

1/4 cup Parmesan cheese

6 olives, chopped

1 cup baby arugula, chopped

1 TBSP extra virgin olive oil


For the garnish:

2 tsp pesto sauce

1 tsp Parmesan cheese

2 sprigs fresh basil, sliced

1 TBSP extra virgin olive oil


Directions:

1). Add all the ingredients, except for the extra virgin olive oil

2). Heat up a non-stick pan over medium heat

3). Add the extra virgin olive oil

4). Add the mixture to the pan

5). Cook until the bottom starts to brown (2-3 minutes)

6). Flip onto a plate, invert and put back into pan

7). Continue to cook until the bottom starts to brown (2-3 minutes)

8). Remove from pan and put onto a plate

9). Spread the pesto sauce, add additional parmesan and garnish with basil and extra virgin olive oil.

Enjoy at any meal.

Olives & extra virgin olive oil: Loaded with heart-healthy omega 3 fats and antioxidants, making it a great addition to a nutritious diet. It has also been linked to a long list of benefits and may protect against inflammation, heart disease,and type 2 diabetes
