Here’s a simple & delicious fish dish to make that’s satisfying, nutritious & perfect for an early chilly fall day like today.

Full of phytonutrients, fiber, healthy protein, good carbs & polyphenols that will keep your gut buddies super happy.

Recipe (Serves 4)

Trout

  • 4 brook trout filets
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp coriander seed, ground
  • 1 tbsp avocado oil

1). Dry filets with paper towel

2). Heat up saute pan, add oil

3). Season both sides of fish

4). Saute skin side down til 90% cooked

5). Flip over for 5 seconds

6). Remove & set asdie


Purple Mash

  • 1 purple potato, large
  • 1 tbsp avocado oil
  • 1 tbsp grass-fed butter
  • 1 tbsp extra virgin olive oil
  • 2 tbsp hemp hearts, whole
  • 2 tbsp full-fat yogurt
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 lemon, juice & zest

1). Pre-heat oven to 350 dF

2). Rub potato with oil

3). Season with salt & pepper

4). Bake 45-60 minutes or until tender

5). Let cool 5-10 minutes & then dice

6). Put into a bowl, add remained ingredients & mix well

7). Reserve


Vegetables

  • 1 head Tuscan kale, sliced
  • 1 bunch asparagus, sliced
  • 1/2 napa cabbage, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, sliced
  • 1 tbsp avocado oil
  • 1/2 tsp Urfa peppers
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

1). Heat up saute pan

2). Add oil

3). Add onion & wilt

4). Add kale, asparagus & cabbage & wilt

5). Add garlic & cook 2 minutes

6). Add seasonings

7). Reserve


Assembly

  • 1 tbsp extra virgin olive oil
  • 4 tbsp freshly shaved parmesan cheese

1). Make a ring with the sauteed vegetables

2). Place potato mash in the center

3). Place fish askew to mash

4). Sprinkle with EVOO & cheese

5). Enjoy
